Best Egg Mayo Recipe

Eggs are by far the most readily available and also a good source of protein in our kitchen. My kids love eggs, especially Gordon. He’s never tasted egg mayo until lately. Reason being i dont own a sandwich maker last time. But now that i’ve bought the Cornell sandwich maker recently, egg mayo will very much become a pat of our lives.

Ingredients needed for my egg mayo recipe are 4 LTK Omega eggs, Mayonnaise (i use Japanese Kyupi), salt, pepper and sugar to taste. I’ve tried using Kraft and Lady’s Choice Mayonnaise before, but Kyupi tastes best. Maybe it’s because it has a sourish taste to it. And of course, it’s extra creamy texture makes the egg mayo ultra smooth.

To make this egg mayo recipe, first, boil the eggs until hard. Cool it before peeling. Mash the eggs together with the mayonnaise. You decide for yourself how lumpy you like your egg mayo to be, k. Last, add the salt, sugar and pepper. DONE. My kids loves to eat the egg mayo straight from the container. And also with plain rice.

And so, this is how this bottle of French’s Classic Yellow Mustard came by. It’s not a common item in my fridge, but if hubby wants some, i have to get him a bottle. I’m surprised that we can buy so many different types of mustard these days. But i’m sticking to this first. Once i’m done with this bottle, i’ll try the rest one by one. Do you like French’s Classic Yellow Mustard? I love it’s tangy taste.

I gotta admit i do spoil my kids a little at times. They grow up so fast. If i dont pamper them now, soon, they’ll be off to college. The weather’s a bitch these days. The heat is stifling, and when it rains, there’s bound to be a thunderstorm. Today is another hot day. After picking up Gordon from school, hubby suggested we take him to Jusco for tea.

Gordon plonked himself in one of the chairs outside Black Canyon Coffee and smiled sheepishly at us. Oh, what the heck. Might as well eat there. Hubby ordered his favorite Thai Green Curry and two plain rice for the both of us. Since i’m not too hungry, i’ll share mine with Gordon if he doesnt mind the curry.

Hubby’s Thai Green Curry arrived fast as there were not that many people at that hour. He’s famished but had to wait till i finish camwhoring with the food, lol. The serving is enough for two. We didnt order drinks as we get plain water for free here. Why bother, huh.

I even got him to scoop some Thai Green Curry up for me to snap. So bad of me, huh. Make him wait like that. The Thai Green Curry at Black Canyon Coffee contains chicken, some brinjals, green pepper, basil leaves and chillies. I’d love to learn how to make Thai Green Curry. Gotta look for a Thai Green Curry recipe pronto. How difficult can it be, right.

What to do? That’s what he has to do as he married a blogger. Uh…. nope. I wasnt a blogger when he married me, lol. It’s after i had Gordon that i became one. Gordon took one bite of the rice with a teeny bit of Thai Green Curry in it and started hissing, wakakaka. He took gulps of water. I asked him if he still wanted any or not and he didnt refuse. I think he ate more than ten spoonfuls of my rice with Thai Green Curry.

Here’s another closer look of the Black Canyon Coffee ice-cream with fruits i ordered for Gordon. What a great way to cool down during a hot evening. Isnt my kid a lucky one :)

My simple lunch

I seldom eat lunch at home unless my mother-in-law cooks. I only prepare breakfast for my kids, and then have lunch elsewhere after sending them to school. Even though the recent price hike on fuel, electricity and rice affected the livelihood of many people, hawkers in Ipoh did not raise their prices high. maybe it’s due to the lower cost of living here, compared to big cities like KL or Penang.

This plate of rice with pork chop, sweet and sour chicken and vegetables only costs Rm3.20. It’s still fairly affordable for many people and the serving is decent enough to keep one full till tea time. I had this at a coffeeshop and not a restaurant. I did not order any drinks to go with my lunch as i usually have a tumbler of water in the car with me. Not that i fancy any of those water-down juices and beverages sold anyway.

Now that the economy is not that good, i try to save whenever possible. Coffeeshop owners have raised the prices of their beverages many times over the years. To me, i can eat without drinking anything at coffeeshops, lol. Not to say i’m cheap, but i really dont like their drinks. I do save a lot this way in a year. Of cos, i do order something every now and then. But if i can help it, i’d rather stick to my tumbler of water.

It’s a wonderful Saturday. After sandwiches, i remembered the packet of Alce Nero organic spinach spaghetti i bought the other day. Gordon was standing at the kitchen entrance and i took the packet of spaghetti out of the fridge and asked him if he wanted “Meen-meen” (noodles in Cantonese) or not. He smiled; that’s a yes.

As i was closing the fridge door, i saw a packet of minced pork on the top shelf. I seldom cook meat anyway, but what the heck. Just in the mood to make something different this time. And pray to God at the same time Gordon wont give me that look and say “Mm-moii”; meaning “Dont want” in Cantonese, lol.

Really nothing fancy here. Ingredients used for the minced pork is Lea &Perrins Worchestershire sauce, Kikkoman Soysauce, sugar and pepper. My MIL doesnt really like Lea & Perrins Worchestershire sauce, but i love it. Do you? I let it marinade for a short while whilst waiting for the spaghetti to boil. Takes 15 minutes anyway.

Fried Minced Pork

Then, fried the marinated minced pork with just a teeny bit of organic olive oil using my Maxim 12cm egg frying pan till fragrant. Wonderful wonderful smell, mmmmmmm.

As for the pasta sauce, i’m still using Prego Pasta Sauce, my all-time favorite. There’s not much Prego sauce left anyway. Will buy some Alce Nero organic pasta sauce later on.  And here’s the bowl of Alce Nero organic spinach spaghetti with minced pork. Lovely color, wonderful texture, excellent taste. Verdict? Gone in under 10 minute, lol. Try it.
