Fried tofu with minced pork and shredded vegetables

It’s not that easy to come up with a recipe that everyone in my family enjoys. My FIL doesnt eat much meat as he doesnt have teeth and hates eating with his dentures on. My hubby prefers vegetarian dishes. My MIL is carnivorous. My kids are easy going. As long as theres’ egg or soup, they’ll eat without much protest. As for me, i prefer light dishes.

Each time my MIL asks me to cook something for my FIL, i’ll definitely be scratching my head. Anyway, i found a packet of tofu inside the fridge and also one forgotten carrot stashed inside the vegetable section. Minced pork inside the freezer. Some spring onions and red chillies too.

This gave me an idea to cook Fried tofu with minced pork and shredded vegetables. Oh, it’s nothing fancy and doesnt take a long time to prepare. Just need to cut up the tofu into small squares. Slice the carrots, red chillies and snip the spring onions into 1 inch length pieces. Thaw and marinade the pork with some corn flour, soya sauce, sugar, salt and pepper. And prepare some chopped up onions, garlic and ginger.

Heat up the wok with some oil. Fry the onions, garlic and ginger till fragrant and add the marinated minced pork to it. Fry till cook. Add the tofu and mix it well. Be careful not to break the tofu into small pieces. Add some oyster sauce to it and a small bowl of water to it and let it simmer with the wok cover on. Sometimes, i add a dash of Lea & Perrins or Maggi Seasoning to it for added flavor.

Last, add the carrot, red chillies and spring onions to it and mix everything well. I love cooking this dish with lots of gravy. If you have kids, you’ll know that they love having their rice with lots of gravy. I’m lucky as both my kids love tofu. Therefore, this is indeed one of those dishes that i can make in a jiffy and yet pleases everyone too. Perfect with a bowl of steaming hot rice.
