Baking Lemon Poppyseed Muffins In Papercups

I’m not new to baking from ready-mixes. Far too lazy to go dig for recipes sometimes. That’s why whenever i see something new on the shelf, i’ll grab a box or two. And this is the box of Krusteaz Lemon Poppyseed Muffin Mix i bought some time back.

Preparing papercups for baking muffins

I dont have any muffin baking cups and i cant find one that can fit into my Philips toaster oven at the malls either. What to do. The creative one in me saw some unused papercups inside the kitchen cabinet and decided to put them to good use. They were far to tall and here’s me measuring them so that i can make them shorter.

Here are the papercups cut to the size i want.

Ingredients for baking lemon poppyseed muffins

I’m only using half the contents. So, i halfed whatever’s written at the back of the box.

Pre-heat toaster oven for baking muffin

Pre-heat the Philips toaster oven at 230 degrees Celcius.

Cracked the gg into the Krusteaz Muffin Mix.

Fold everything up lightly and poured the poppyseed into the muffin mix.

Spoon the lemon poppyseed muffin mix into the prepared papercups half full. Yield around 9 small muffins.

TADAAAAA…… my lovely Lemon Poppyseed muffins are ready!!!! YUMMMMMM…….. If you’ve not baked muffins in papercups using a toaster oven before, believe you me, it can be done.
