If you ask my kid what he wants to eat, chances are, he will tell you he wants “Meen-meen egg”; meaning noodle with egg. It’s his all-time favorite. I guess i can relate to that as i love a simple bowl of noodle with an egg too. Kinda like comfort food to me. Tonight is just another ordinary night with an ordinary request from my extraordinary kid. He walked up to me and told me “I want Meen-meen egg, Mama”. How can i refuse such an ordinary request, you tell me.
But tonight, the ordinary mom wants to make something out-of-the-ordinary for her extraordinary kid. And after getting the needed ingredients out, i had an idea to make him a Noodle Omelette. Prepared with all the same old ingredients, but with a different finished look. I used a packet of chicken flavored Maggi Mee Lite (MSG-free), two eggs and some minced pork marinated with Teriyaki Sauce. You can add vegetables if you like but my kid doesnt like it.
Here’s how i made the Noodle Omelette for my kid. First, i cooked the packet of instant noodle together with the packet of seasoning. Drain off the soup and set aside. I then fry the minced pork with my small Tefal 12cm egg frying pan till fragrant. Next, mix all three ingredients in a big bowl and add some McCormick Garlic Powder with Parsley (optional) to it.
To cook, pour the mixture slowly onto my Tefal stir-fry pan. Do not stir. Cook it over medium heat and make sure the bottom doesnt burn. Flip it over and cook the other side till it’s done, gaotim. Note, i didnt use oil in this Noodle Omelette recipe. Instead i rubbed the base of my Tefal Stir-fry pan with some olive oil before i pour the mixture into it so that i can move the Noodle Omelette easily.
This is how my Noodle Omelette like. I dont have any cheese at home. If not, i would transfer the Noodle Omelette to a plate after the bottom is done, top it with some cheese and place it into my Philips toaster oven and bake it for a few minutes till the cheese is browned. Sounds yummy hoh. If you have the time, you can even fry the mixture in smaller batches or make them into bite-sized nuggets. Makes a great snack. *keys in note into my Nokia N82 to go buy cheese on my next grocery shopping trip*

At least i managed to get this shot after i finshed washing everything up. I only got a small bite *sulks*. Haih… what’s new. Happiness is seeing them enjoying their food. If you have picky eaters, this Noodle Omelette may get them to eat. Just add whatever you want to this simple Noodle Omelette Recipe to make it different. Cooking for kids sure’s fun, eh.
