How To Make Lotus Root Soup Step By Step – Recipe

Do you like to eat Lotus Roots? It’s a very versatile root vegetable and tastes wonderful when fried or braised. Lotus Root Soup is very delicious too and easy to prepare. I made a big pot the other day. Here are some pics i took when i was preparing my Lotus Root Soup.

Ingredients needed are one Lotus Root, some red dates, dried oysters, and meat of choice. I used pork ribs as my Father-in-law wants to eat them.

First, scrub the Lotus Root with a vegetable scrub and remove the skin with a peeler. Cut it into small slices.

Next, rub the pork ribs with salt. Leave for a few minutes, wash and par-boil to remove the “porky” smell and scum. This will ensure you end up with a pot of clear soup and tasty pork ribs.

Then, place the cut-up Lotus Root, red dates and oysters into the pot.

Place the par-boiled pork ribs in and add water. Bring to a boil and turn the heat down to medium and boil for an hour or two. If you have the time, it’s best left to simmer over a low heat for at least four hours for best results.

And here’s what you get later on. A very clear and delicious Lotus Root Soup with Pork Ribs to go with your rice. Dip the pork ribs into some Kikkoman Soy Sauce when you eat it. Dont throw away the rest of the ingredients out. Eat them as well.

    what do you use for your seasonings for soup? could you post a recipe for the claypot chicken rice?

    I dont need seasoning for the soup. But if you like, you can add a bit of salt to the pot during cooking time. You can also use a little soy sauce when you are drinking it. As for the claypot chicken rice, i had it at the hawker centre. Hence,no recipe.
