Cookie Baking Kit


Bought this cookie baking kit from MPH Bookstore this evening. The thing that caught my eyes was the gingerbreadman cookie cutter inside the kit. There are altogether six cookie cutters inside. Besides the gingerbreadman cookie cutter, i get a heart-shaped cookie cutter, a round cookie cutter, a bird-shaped cookie cutter, a fish-shaped cookie cutter, a star-shaped cookie cutter together with four stainless steel measuring spoons. There’s also a cookie recipe book with 64 cookie recipes. All these for only Rm32.90 only. Not bad, huh.

Christmas is just round the corner and i know many people have started baking for the festive season ahead. My kid saw some gingerbreadman cookie at Coffee Bean when we had tea there just now and asked me to buy him one. Each costs Rm8.90 if i remembered correctly. I told him i’ll make him some and that’s how this cookie baking kit ended up in my room now, lol. Well, i’ll go buy some ingredients tomorrow and play with my cookie baking kit if time permits.

Chicken Nuggets Recipe


These Chicken Nuggets are my kids’ favorite snack. I usually order this for them when we dine at Parkson’s Kopitiam Junction. Gordon eats his with the mayonaise. Malcolm likes it plain.

Chicken Nuggets are one of the easiest food to prepare for kids. I used to make them when Gordon was just a toddler. It’s one of the easiest way to get him to eat some vegetables as i mix them into the meat before i fry it. Here’s my own version of Chicken Nuggets Recipe:

Ingredients:

500g minced chicken
2 garlic cloves (crushed)
1/4 cup fresh breadcrumbs
2 tbsp chopped basil
1/4 tsp cayenne pepper
Olive oil for cooking

Method:

1) Combine chicken, garlic, breadcrumbs, basil and cayenne pepper in a large bowl and season. You can add any kind of chopped vegetables to it if you like. My favorite being celery and carrots.

2) Using damp hands, roll tablespoons of the mixture into balls and place on a baking tray lined with baking paper. Flatten slightly with a fork.

3) Heat the olive oil in a frying pan and fry in batches over medium heat. Turn them every now and then until golden.

4) Set aside to cool and they are ready to be eaten.

Walnut Chicken Stew

I designed this Walnut Chicken Stew today. It’s cold and rainy, perfect day for stews. With just a few ingredients, my whole family gets to enjoy a hearty wholesome dish to go with rice.

I used 2 whole chicken legs, skinned and cut into smaller pieces. Marinate the chicken with soy sauce, pepper and sesame oil and place aside. A handful of walnuts, shallots and garlic. Vegetables consist of carrots and potatoes, cleaned and cut into smaller pieces.

Brown the chicken together with the walnut, shallots and garlic till fragrant. Place together with the vegetables into claypot and add water till it reaches the top of the ingredients. Add some thick black soy sauce and a little salt to the water and boil on high. Reduce heat and simmer for at least two hours. And this is what you end up with.

Try it. It’s delicious with a nutty flavor!!!! Very good for the heart and benefits the brains as walnuts are an excellent source of omega-3 essential fatty acids, a special type of protective fat the body cannot manufacture.
