Walnut Chicken Stew

I designed this Walnut Chicken Stew today. It’s cold and rainy, perfect day for stews. With just a few ingredients, my whole family gets to enjoy a hearty wholesome dish to go with rice.

I used 2 whole chicken legs, skinned and cut into smaller pieces. Marinate the chicken with soy sauce, pepper and sesame oil and place aside. A handful of walnuts, shallots and garlic. Vegetables consist of carrots and potatoes, cleaned and cut into smaller pieces.

Brown the chicken together with the walnut, shallots and garlic till fragrant. Place together with the vegetables into claypot and add water till it reaches the top of the ingredients. Add some thick black soy sauce and a little salt to the water and boil on high. Reduce heat and simmer for at least two hours. And this is what you end up with.

Try it. It’s delicious with a nutty flavor!!!! Very good for the heart and benefits the brains as walnuts are an excellent source of omega-3 essential fatty acids, a special type of protective fat the body cannot manufacture.
