It’s Saturday. Hubby’s back as i fell ill on Wednesday night. He cant be home for long as there’s work to be done back in KL. We dont feel like going out for food. Homecooked goodness is still best. Stew is the best comfort food of all times. And today, we’re having Chicken Stew with Chinese Mushrooms and Puffy Tofu (tau fu pok).
These are the main ingredients needed to cook this Chicken Stew. Other than that, you’ll need some chopped shallots, garlic and ginger. Fry these with sesame oil till fragrant. Then add the main ingredients in and mix them well. Add enough water to cover all the main ingredients, soy sauce, oyster sauce, chinese rice wine and a little bit of salt, sugar and pepper for flavoring. For a different taste each time, you can add taucu, or blackbean paste to it. Stew for a few hours till all tender. Best served piping hot straight from the pot with rice.
