If you ask my kid what he wants to eat, chances are, he will tell you he wants “Meen-meen egg”; meaning noodle with egg. It’s his all-time favorite. I guess i can relate to that as i love a simple bowl of noodle with an egg too. Kinda like comfort food to me. Tonight is just another ordinary night with an ordinary request from my extraordinary kid. He walked up to me and told me “I want Meen-meen egg, Mama”. How can i refuse such an ordinary request, you tell me.
But tonight, the ordinary mom wants to make something out-of-the-ordinary for her extraordinary kid. And after getting the needed ingredients out, i had an idea to make him a Noodle Omelette. Prepared with all the same old ingredients, but with a different finished look. I used a packet of chicken flavored Maggi Mee Lite (MSG-free), two eggs and some minced pork marinated with Teriyaki Sauce. You can add vegetables if you like but my kid doesnt like it.
Here’s how i made the Noodle Omelette for my kid. First, i cooked the packet of instant noodle together with the packet of seasoning. Drain off the soup and set aside. I then fry the minced pork with my small Tefal 12cm egg frying pan till fragrant. Next, mix all three ingredients in a big bowl and add some McCormick Garlic Powder with Parsley (optional) to it.
To cook, pour the mixture slowly onto my Tefal stir-fry pan. Do not stir. Cook it over medium heat and make sure the bottom doesnt burn. Flip it over and cook the other side till it’s done, gaotim. Note, i didnt use oil in this Noodle Omelette recipe. Instead i rubbed the base of my Tefal Stir-fry pan with some olive oil before i pour the mixture into it so that i can move the Noodle Omelette easily.
This is how my Noodle Omelette like. I dont have any cheese at home. If not, i would transfer the Noodle Omelette to a plate after the bottom is done, top it with some cheese and place it into my Philips toaster oven and bake it for a few minutes till the cheese is browned. Sounds yummy hoh. If you have the time, you can even fry the mixture in smaller batches or make them into bite-sized nuggets. Makes a great snack. *keys in note into my Nokia N82 to go buy cheese on my next grocery shopping trip*

At least i managed to get this shot after i finshed washing everything up. I only got a small bite *sulks*. Haih… what’s new. Happiness is seeing them enjoying their food. If you have picky eaters, this Noodle Omelette may get them to eat. Just add whatever you want to this simple Noodle Omelette Recipe to make it different. Cooking for kids sure’s fun, eh.

Chinese claypot chicken rice is best eaten on a cold and rainy day. The aroma wafting up my nostril from the stall is simply too hard for me to resist. It’s one of the best tasting claypot chicken rice stalls around my area. We do have a few but i prefer the one here at Ding Hao Foodcourt. We do go there ever so often.
The only thing i dont like about the stall is the man cooking the claypot chicken rice. I’m here to give him business and yet, he never even smile. Oh, wateva. I’m here to eat, not to look at his face, lol. Hubby doesnt like it very much as he says it’s carcinogenic food. Yeah, i know. But i only ever eat claypot chicken rice like once or twice a year. Wont send me to hell so soon.h
So, what’s in the chinese claypot? We get rice, of course. A few pieces of chicken thigh, chinese pork sausage and a tiny piece of salted kurau fish. Can you see it? It’s right in the middle of the claypot, a little bit to the right with the blackish bit resting on a piece of chicken, above the chinese sausage. Am i being clear here? That’s the secret ingredient that’s making the claypot chicken rice so fragrant.

Ever heard of The Gingerbread Man story? It’s about the Gingerbread Man who ran away as soon as the oven door is opened and in the end, got eaten by a fox. I no longer have the story book but if i see it at the bookstore one day, i will buy it back and read it to my kids as they munch on the Gingerbread Man cookies that i bake. I enjoyed the book very much when i was little.
And here’s my Gingerbread Man Cookie Recipe:
Ingredients:
(A)
60 g butter
100g sugar
pinch of salt
(B )
1 egg
(C)
170g golden syrup/honey
(D)
460g flour
2tsp ginger powder
1/2 tsp cinnamon powder
1tsp Baking soda
Method:
1) Mix (A) till well combined. Add in (B) and cream till smooth.
2) Add in (C), then (D) and mix till well blended.
3) Rest the mixture for 15 minutes. Roll it out to a thickness of around 3mm and cut it using a Gingerbread Man cookie cutter.
5) Bake at 180 deg Celcius for 15 minutes.
6) Once cooled, decorate with royal icing.
Royal icing recipe:
180g icing sugar
1 egg white
Method:
Mix icing sugar and egg white till smooth and of spreading consistency. For a softer icing, use an extra egg white. For stiffer icing, add extra icing sugar.

Isnt this Gingerbread House beautiful. I went to Tesco Station 18 this evening and saw this right outside King’s Bakery. I didnt go to King’s to inquire, but my guess is they sponsored this Gingerbread House for Christmas. I tried to get a nice pic of this Gingerbread House with King’s in the background without the kid. Too bad, he just wont budge. Not my kid, k. Mine has gone to his Grandma’s, who lives nearby.
Seeing this Gingerbread House makes me want to make my kids some Gingerbreadman cookies. When was the last time you baked Gingerbreadman cookies for your kids? I have a good Gingerbreadman Cookies recipe to share. You can bake it with your toaster oven too. I bake all my cookies using a toaster oven. Hubby got back from KL very late last night. Thus, he woke up quite late and didnt have munch at home. After sending Malcolm to school, we went to Jaya Jusco to buy some grocery items. Gordon has been bugging me to take him to McDonald’s since last week. Well, that’s because he remembered we didnt have ice-cream there last week. That kid, he has a good memory.
Anyway, hubby said he wanted to get him the Madagascar 2 Happy Meal set as it had some toy that can errrr “talk” when it’s shaken, lol. In the end, we bought Gordon a Happy Meal set with Alex the Lion, and that fler still insists on his ice-cream after that. And no, we didnt eat anything there as we’ve always felt McD’s food is a real rip-off. I only go there for the ice-cream.
As usual, we ended up having a bite at Black Canyon Coffee… AGAIN, lol. This is what we ordered for Gordon. This is what i call a real meal. A plate of rice with lots of vegetables and a large piece of fish deep-fried with lots of sesame seeds. Gordon loves it. Both hubby and i ordered a bowl of Thai Green Curry with plain rice to go with it. Yummy.
I’m going to watch The Gem Of Life 26 now. When Easterly Showers Fall On The Sunny West 21 is also on tonight. This series is going to end soon. No idea what’s going to replace it. Glad also cos i dont really enjoy it. The Gem Of Life will drag right up till next February. Oh, wateva. Gotta go now. Need my daily TVB drama fix, lol.
