Egg Mayo Sandwich for Breakfast

Every once in a while, Gordon wakes up very early in the morning. By that, i mean 6 or 7am. As you know, i sometimes work through the night. Dont expect me to jump out of bed and cook for him at that ungodly hour, puhleeeeeease.

That’s one of the reasons why i make sure i have bread and egg mayo at home always. Knowing i made egg mayo the night before, Gordon asked for egg sandwich. This is what i dug out of the fridge with my eyes half shut, or are they half opened?

Egg mayo sandwich must be the easiest and fastest nutritious breakfast any mom can prepare for her kids. I can always take the easy way out and sandwich the egg mayo between the two pieces of bread. But, my kids are precious to me and i want them to have the best. So, i spread some Kraft Cheese Spread onto two pieces of bread in two small triangles.

Top it with some mouth-watering egg mayo and shape it nicely.

Squeeze some French’s Classic Yellow Mustard onto the egg mayo.

Put the two pieces of egg mayo sandwich neatly into the Cornell sandwich maker and turn the switch on.

Gordon wanted to know why his mom is taking such a long time preparing a simple egg sandwich for him and came out to check. I told him his egg mayo sandwich is already inside the sandwich maker and he climbed onto a stool to take a closer look.

He then jumped off the stool, dragged me to the fridge and requested for a spoonful of the best egg mayo ever. Okay, i did just that and he ran back inside the bedroom. A few minutes later, the egg mayo sandwich is ready. Remove them from the sandwich maker and cut them promptly along the diagonal lines before they harden.

There should be four pieces of egg mayo sandwich. Dont have to guess who took one away, lol. I stack them this way to cool so that water condensation doesnt turn them soggy.

Best Egg Mayo Recipe

Eggs are by far the most readily available and also a good source of protein in our kitchen. My kids love eggs, especially Gordon. He’s never tasted egg mayo until lately. Reason being i dont own a sandwich maker last time. But now that i’ve bought the Cornell sandwich maker recently, egg mayo will very much become a pat of our lives.

Ingredients needed for my egg mayo recipe are 4 LTK Omega eggs, Mayonnaise (i use Japanese Kyupi), salt, pepper and sugar to taste. I’ve tried using Kraft and Lady’s Choice Mayonnaise before, but Kyupi tastes best. Maybe it’s because it has a sourish taste to it. And of course, it’s extra creamy texture makes the egg mayo ultra smooth.

To make this egg mayo recipe, first, boil the eggs until hard. Cool it before peeling. Mash the eggs together with the mayonnaise. You decide for yourself how lumpy you like your egg mayo to be, k. Last, add the salt, sugar and pepper. DONE. My kids loves to eat the egg mayo straight from the container. And also with plain rice.

One of the best foods to start off a great morning is of course, soft-boiled eggs. Some call it half-boiled eggs. I’m sure there are many of you who havent seen this soft-boiled egg maker before, am i right. You are so used to modern electrical appliances that costs a bomb. But this yellow plastic soft-boiled egg maker only cost me Rm10, lol. And it’s very accurate. Just need to pour boiling water to the right level that corresponds to the number of eggs you wish to cook.

Here, i’m cooking two soft-boiled eggs for my kids breakfast. Both my boys love soft-boiled eggs. Isnt it easy and lovely? If you dont fancy your eggs soft-boiled, you can always add more boiling water to it so that the yolk is not too runny. I love mine three quarter done as it has more bite in it.

This is soft-boiled eggs just the way Samm likes it. I always add soy sauce and a generous amount of Laleli Extra Virgin Olive Oil to it. And yes, top it with a dash of pepper too if you like. It’s nutritious and good for your health. If you’ve not had soft-boiled eggs for some time, doesnt this pic make you drool?

Homecooked fried bitter gourd with eggs recipe

I love bitter gourds. Too bad my kids dont like it, but that’s not my problem, lol. But if i were to make soup with bitter gourds, you can be sure they wont touch it. But if it’s fried with eggs, maybe….. just maybe, they may eat the egg bits. Many people swear by the curative properties of bitter gourds for diabetes. But even if it doesnt, i still love to eat bitter gourds.

Preparation for homecooked fried bitter gourd with eggs is easy. Just slice the bitter gourd lengthwise, scrape and scoop out the inner white pulp. Leave the outer green parts. And then, cut the bitter gourd into thin slices. Rub salt all over the cut up bitter gourd slices to remove the bitter taste if you like. Leave for about 5 to 10 minutes and rinse the salt off. Squeeze the water out of the bitter gourd.

Put all the sliced bitter gourd into the wok and fry it for a short while. Crack a few eggs in and voila, you get a quick dish of homecooked fried bitter gourd with eggs. You may add some garlic or onions to it if you like when you fry the bitter gourd but i normally dont. But if i’m in the mood, i may add some prawns to it just right before i crack the eggs in.
