It’s a long weekend for folks in Malaysia. We’re all celebrating Deepavali holidays at home since hubby isnt home for the weekend. The kids still woke up early at 8am despite today being a public holiday. What to do, have to follow suit. Lucky for me MIL bought breakfast of wantan meen for us.

Malcolm’s been bugging me to buy him a cake since last night. He saw his brother’s Children’s Day Celebration pics on the phone and wanted to have too. I remembered the Dutch Oven in the kitchen and went to rummage the fridge for ingredients. I wanted to try steaming a Butter Cake with it. Malcolm’s a lucky boy today. I have everything needed for a Steamed Butter Cake!!! You can see them all in the pic above.
Ingredients:
A) 280g butter
240g sugar
B) 4 eggs
C) 300g flour
2 1/2 tbsp double action baking powder
D) Some chopped Toblerone chocolate ( or whatever you fancy. Can be raisins or nuts)
Method:
1) Lightly grease and line a 20cm round mould
2) Beat A until light and fluffy. Add in B slowly, and cream till smooth and light.
3) Add in sieved C, mix until well-blended.
4) Pour batter into greased mould. Add D to it and mix it a bit.
5) Steam for 70 minutes.
6) Leave the cake aside for 5 minutes before taking it out of the mould. Best served warm.

Here’s the Steamed Butter Cake batter all ready for the Dutch Oven. (I halved the ingredients as i only have a 15cm mould. If you intend to do that, the 70 minutes steaming time remains the same, ok.)

Placed it into the Dutch Oven at 5.35pm on high. (water in the pot already at boiling point when i placed the cake mould in)

At 5.45pm, i turned the heat down to low. I placed the mould in slightly to one side of the Dutch Oven. Dare not open the cover to adjust it as i was afraid it might interfere with the steaming process due to temperature change. I’ll be more careful next time.

At 5.50pm, i can see that it’s rising beautifully albeit a little high on the left side, lol.

As the recipe calls for a 70 minutes steaming time, i turned the heat off and left the butter cake inside the Dutch Oven for a short while. The first time i steamed my corn cake, i took the lid off the wok as soon as i turned the heat off and the cake just shrunk, LOL!!!! Smarter now.

Beh tahan liao….. started blowing at the cake to help it cool down faster, LOL. CUTE!!!!
