Roasted Tomato Soup

4 tbsp olive oil
-10 plum tomatoes, halved
-1 white onion, thinly sliced
-2 garlic cloves, halved
-2 thyme sprigs
-1 tsp white sugar
-2 bunches of basil
-1 quart chicken or vegetable stock
-Salt and freshly ground black pepper

To serve

-2 tbsp olive oil
-4 small clusters of cherry tomatoes on the vine
-4 basil leaves, thinly sliced

Combine the tomatoes, onion and garlic in a mixing bowl and season with olive oil, salt and pepper. Lay out on a baking tray and sprinkle with the thyme, basil and sugar. Roast in the oven at 425 degrees until caramelized.

Pour the tomatoes into a blender and puree. While the blender is running, ladle in hot stock to smooth the soup. You may not use all of the stock.

For garnish, heat olive oil, lightly sauté the tomato clusters on the vine. Serve on top of the soup with thin sliced basil.

I’ve been playing quite a lot of games on Facebook lately. Waste of time, huh. And guess what, i installed Hell’s Kitchen Game On Facebook yesterday, lol. I’m not really a huge fan of Gordon Ramsay due to the amount of expletives he dish out on each episode of Hell’s Kitchen Reality TV series. One still has to be likeable no matter how famous one is, right.

I have friends who practically worship Gordon Ramsay and would watch every single episode of Hell’s Kitchen when it airs. Are you one of them? Do you like his recipes? Have you bought any of Gordon Ramsay’s recipe books? In Hell’s Kitchen Game On Facebook, players get to unlock some of his recipes as they advance up the levels.

If you have a Facebook account, you can play Hell’s Kitchen Game On Facebook yourself and feel what it’s like to get cussed at by Gordon Ramsay whenever you fail his tasks. I already have Hell’s Kitchen Game for PC, Wii & NDS, another platform wont kill, lol. There’s even Hell’s Kitchen Game for iPhone and iPod Touch!!! I believe people play Hell’s Kitchen Game to see what kind of Recipes they will get at each level.

I’ll make life easier for you instead. I’ll post the Hell’s Kitchen Game recipes up as i unlock them, ok. There are only 10 Gordon’s Ramsay’s famous recipes to unlock, ok. Roasted Pork, Chinese cabbage and Taupok Stew – Recipe

This household loves stew. That’s why most of the dishes my MIL cooks are very simple and easy ones. We all eat at random hours. This morning, she made another pot of stew again. With just a few simple ingredients, we get to enjoy a good pot of stew that goes well with both rice and plain noodles.

Roasted Pork, Chinese Cabbage and Taupok Stew

You only need Roasted Pork or “Siew Yook”, one Chinese cabbage, and a packet of taupok. As for seasoning, fry some chopped ginger and garlic till fragrant inside a claypot. Put all ingredients into the claypot. Dont add too much water to it as the Cabbage will shrink. Then, pour some “Siew Heng” wine (Chinese Cooking Wine) to it.

Add some light soy sauce to it. Use dark soy sauce if you like it darker, k. You dont need salt as the Roasted Pork is already salty to begin with. Sometimes, my MIL will even fry the “Siew Yook” until fragrant before she makes this stew. This will depend on her mood lah. Simple mah, haimai. Cook on high till it boils and turn the heat down and let it simmer for an hour or two.

This is an upclose and personal shot of the bowl of Roasted Pork, Chinese cabbage and Taupok stew. Top it with a dash of soy sauce if you feel it’s not salty enough. Me, i always add some to it. Sometimes, i will eat it with Apple Cider Vinegar for a tangy taste.Try it one day when you are lazy and dont like cooking up a storm, k. Delicious comfort food!!!

Easy Minced Pork Patties Recipe

My MIL cooked this morning but when i went to check on the dishes, found nothing there that my kids like. Saw a packet of minced pork staring at me and decided to make some minced pork patties for them.

Ingredient needed:

100gm minced pork
Corn flour, soy sauce, sugar and pepper to marinate
2 eggs

Cooking method:

Marinade the minced pork with the soy sauce, sugar and pepper for a short while. Knock two eggs into the minced pork and mix it up well. Fire up the stove and fry the patties in small batches. I only use a tablespoon of the mixture for each patty.

You can make smaller bite-sized ones if you have smaller kids. Add some chopped up vegetables like celery and carrots to the mixture for added nutritional value. Me, i wont bother, lol. Lazy mah. Tastes great on its own, with ketchup, mayonnaise, etc.

As for my kids, they ate these minced pork patties with white rice with lots of Japanese mayonnaise. Fattening, eh. Who cares lah. They like mah can loh, haimai. Less headache for me.

Hot Pork Ribs Porridge On A Cold Rainy Day

This is real comfort food. With the rain showing no signs of stopping, what more can i do except to stay home and cook a huge pot of hot pork ribs porridge? My kids no longer like porridge, not even fish porridge. No idea why. Only hubby and i eat porridge these days. You really dont need much to cook porridge, you know.

I took out a packet of pork ribs (about 600gm) from the freezer and left it to defrost in a pot of warm water (still in its plastic bag, of course). Shredded some ginger, and washed a cup of rice into the claypot. Added some water to it and let it boil on the stove. Add some salt to it, k.

By then, the pork ribs were ready and i rubbed some salt all over them. Rinsed off the salt and par-boiled it to get rid of the porky smell and taste. Dumped them all into the claypot and turned down the heat. In an hour or so, it’ll be ready. I sometimes add dried oysters or dried scallops to my porridge.

Porridge is best eaten with a dash of soy sauce, sesame oil, pepper and lots of spring onions. I didnt prepare any spring onions to go with my porridge today. If you have fermented beancurd or fu-yuih, add a piece to it. Phwooooah…. SYIOK!!!
