
This is real comfort food. With the rain showing no signs of stopping, what more can i do except to stay home and cook a huge pot of hot pork ribs porridge? My kids no longer like porridge, not even fish porridge. No idea why. Only hubby and i eat porridge these days. You really dont need much to cook porridge, you know.
I took out a packet of pork ribs (about 600gm) from the freezer and left it to defrost in a pot of warm water (still in its plastic bag, of course). Shredded some ginger, and washed a cup of rice into the claypot. Added some water to it and let it boil on the stove. Add some salt to it, k.
By then, the pork ribs were ready and i rubbed some salt all over them. Rinsed off the salt and par-boiled it to get rid of the porky smell and taste. Dumped them all into the claypot and turned down the heat. In an hour or so, it’ll be ready. I sometimes add dried oysters or dried scallops to my porridge.
Porridge is best eaten with a dash of soy sauce, sesame oil, pepper and lots of spring onions. I didnt prepare any spring onions to go with my porridge today. If you have fermented beancurd or fu-yuih, add a piece to it. Phwooooah…. SYIOK!!!

Ever heard of The Gingerbread Man story? It’s about the Gingerbread Man who ran away as soon as the oven door is opened and in the end, got eaten by a fox. I no longer have the story book but if i see it at the bookstore one day, i will buy it back and read it to my kids as they munch on the Gingerbread Man cookies that i bake. I enjoyed the book very much when i was little.
And here’s my Gingerbread Man Cookie Recipe:
Ingredients:
(A)
60 g butter
100g sugar
pinch of salt
(B )
1 egg
(C)
170g golden syrup/honey
(D)
460g flour
2tsp ginger powder
1/2 tsp cinnamon powder
1tsp Baking soda
Method:
1) Mix (A) till well combined. Add in (B) and cream till smooth.
2) Add in (C), then (D) and mix till well blended.
3) Rest the mixture for 15 minutes. Roll it out to a thickness of around 3mm and cut it using a Gingerbread Man cookie cutter.
5) Bake at 180 deg Celcius for 15 minutes.
6) Once cooled, decorate with royal icing.
Royal icing recipe:
180g icing sugar
1 egg white
Method:
Mix icing sugar and egg white till smooth and of spreading consistency. For a softer icing, use an extra egg white. For stiffer icing, add extra icing sugar.

Isnt this Gingerbread House beautiful. I went to Tesco Station 18 this evening and saw this right outside King’s Bakery. I didnt go to King’s to inquire, but my guess is they sponsored this Gingerbread House for Christmas. I tried to get a nice pic of this Gingerbread House with King’s in the background without the kid. Too bad, he just wont budge. Not my kid, k. Mine has gone to his Grandma’s, who lives nearby.
Seeing this Gingerbread House makes me want to make my kids some Gingerbreadman cookies. When was the last time you baked Gingerbreadman cookies for your kids? I have a good Gingerbreadman Cookies recipe to share. You can bake it with your toaster oven too. I bake all my cookies using a toaster oven. This Bitter Gourd with Spare Ribs and Dates Soup is a hot favorite with my family. Bitter gourd has many health benefits. It contains a mixture of flavonoids and alkaloids which stimulates the pancreas to produce insulin that controls the blood sugar levels in diabetics. If you are a diabetic, then bitter gourd soup is good for you.

You will need one bitter gourd, 5 large red dates, 5 large dried oysters and spare ribs. You can use chicken if you want to. It’s easy to prepare. Rub spareribs with some salt and set aside. Cut the bitter gourd into half, and scoop the spongy insides out with a spoon. Wash it and cut into bite size pieces. Cut the dates and remove the stones. Wash the salt from the spare ribs and blanch with hot water. I do this to remove the “porky” taste from it. Final step, put everything into the crockpot and put on high for a few hours.

And this is how the Bitter Gourd with Spare Ribs and Dates Soup looks like when served. The soups is clear, not cloudy. The bitter gourd is soft and not bitter at all. I’ve been eating a lot of this Greentea Tong Sui of late. By now, i guess most of you already know my affinity for everything Greentea. According to the lady who made this Greentea Tong Sui recipe, it contains fresh milk and corn. The translucent pearls you see in the spoon have a texture like sago. Only larger versions of it, lol. Lends a bite to the otherwise watery tong sui. The corn blends in well too. If i’m not wrong, the greentea is most like greentea powder which you can buy from just about any baking supplies store.
So, there you go. Only four main ingredients to this Greentea Tong Sui Recipe; Greentea powder, fresh milk, corn and those big sago pearls. And of course, rock sugar for sweetness. By the way, i wrote a post on How To Make Greentea Ice-cream earlier. Do check it out if you havent read it. I’ll be making another batch of ice- cream soon. This time, with a different method.
