Everyone in the family seems to be down with kinda illness. Both my kids and i are having sore throat, cough and cold. Aiya, all thanks to our weather lah @#$%^&*. That’s why, soups are the dinner table’s permanent residence now, lol.
The pic above are the ingredients for old cucumber soup. It doesnt take much to make a pot of nutritious soup that hydrates our body at the same time. Two mid-sized old cucumber, a cup of dried groundnuts, 10 – 12 red dates with the seed removed, dried squid and meat of choice are enough for a family of 6 – 8 persons. We’re using spared pork ribs. Feeling dry and parched? Have some soup each day.

This is what i saw lying on the kitchen floor first thing this morning. I asked my MIL what it is and she told me it’s Sang Lin Ngau. In English, it literally means “Wild Lotus Root”. Have you seen anything like this before? Believe you me, i’ve never. She told me it makes a good nourishing soup, especially beneficial to the elderly.

It’s all cut up and in the crockpot now. I can see that she’s added wolfberries, red dates and pork ribs to it. I hope the soup turns out sweet and the kids will drink it. I’d like to know what this is called. Please….. i need an answer desperately!!!!!

4 tbsp olive oil
-10 plum tomatoes, halved
-1 white onion, thinly sliced
-2 garlic cloves, halved
-2 thyme sprigs
-1 tsp white sugar
-2 bunches of basil
-1 quart chicken or vegetable stock
-Salt and freshly ground black pepper
To serve
-2 tbsp olive oil
-4 small clusters of cherry tomatoes on the vine
-4 basil leaves, thinly sliced
Combine the tomatoes, onion and garlic in a mixing bowl and season with olive oil, salt and pepper. Lay out on a baking tray and sprinkle with the thyme, basil and sugar. Roast in the oven at 425 degrees until caramelized.
Pour the tomatoes into a blender and puree. While the blender is running, ladle in hot stock to smooth the soup. You may not use all of the stock.
For garnish, heat olive oil, lightly sauté the tomato clusters on the vine. Serve on top of the soup with thin sliced basil.

I wasnt feeling very well for the whole of last week. I guess i’ll just blame the weather for making the kids and i sick. No one felt like eating much also. But then, we still need our daily nutrition, right.

Soup is one of the best food to nourish a sick person. And so, we made a huge pot of ABC soup on Saturday. I even kept some inside the fridge. It’s Monday now, and it’s still inside the fridge, lol. We had another round of Lotus Root Soup last night.

Here’s Malcolm enjoying his favorite ABC soup. It’s great seeing my kid slurping his soup. He doesnt fancy rice and meat much, but he loves fish. That’s easy as we eat fish everyday. Mmmmmm…. sluuurrrrpppppp

I wonder who named this soup ABC Soup. But somehow, the name stuck. My MIL calls it Carrot Soup. To me, it’s Chinese Minestrone soup, lol. No matter what you call it, these are the main ingredients used when making a pot of delicious ABC Soup. It’s Malcolm’s favorite.

You just need tomatoes, carrots, potatoes, onions and some meat. Pork or chicken doesnt really matter. I just use whatever i find inside the fridge. You can add some ikan bilis to it if you like. But not too much as it can become quite salty. Crack some peppercorn in for added flavor. Clean all the vegetables properly and cut them up into smaller pieces. Rub the meat with salt and set aside for a few minutes.

Wash and par-boil the meat to remove the “meat smell” and scum. This will ensure a clear pot of soup everytime. Place everything into a pot and fill it with the quantity of water needed for your family’s consumption. Boil it on high. Turn the heat down and allow to simmer for a few hours. I normally simmer for around four hours.

And this is what you get. A great bowl of nutritious and comforting ABC soup that’s loved by all in the family.
