
Have you any idea just how hot the weather is these days? We get extreme heat for a few straight days, and then, it pours in the evening without fail. Ok, screw the weather. Let’s think of ways to cool the body down instead. The best way is to make sure we stay hydrated at all times. Drink lots of plain water, and cooling soups. Beverages like coffee and tea dehydrates the body. So, drink less of those, k.
We’re having a huge pot of organic green apples, carrots, corn with pork soup today. It’s very nutrituous and cooling. Great for weather like now. Malcolm will like this very much cos there’s carrots in it. Gordon will only want the soup to go with his noodle or rice. Me, i eat everything, lol. Dip the pork slices in Kikkoman Soy Sauce to go with the hot rice, yummy.
I’ve already mentioned all the ingredients needed to make this Green Apples soup. You can substitute the meat with chicken or pork ribs if you like. Though this soup’s main ingredient is Green Apples, it’s not sour at all. In fact, you’ll be surprised at how sweet it is. Go on, try it. Best to buy organic green apples as we’re leaving the skin on. It may just turn out to be your kids’ favorite soup.

It’s a cold evening. It rained so hard just now that a few trees fell onto the street outside my house. We’re lucky as our cars were not parked there. If not, i can only imagine the damage.
My Mother-in-law made this Basil soup with eggs and fishballs just now. Malcolm will enjoy it. We used to order this for him when we have meals at the nearby foodcourt.
I’ll get this Basil Soup Recipe from her when she’s in a good mood, lol. Our neighbor has Basil plants. It’ll be great to make this for my picky-eater whenever he asks for soup.

Do you like to eat Lotus Roots? It’s a very versatile root vegetable and tastes wonderful when fried or braised. Lotus Root Soup is very delicious too and easy to prepare. I made a big pot the other day. Here are some pics i took when i was preparing my Lotus Root Soup.

Ingredients needed are one Lotus Root, some red dates, dried oysters, and meat of choice. I used pork ribs as my Father-in-law wants to eat them.
First, scrub the Lotus Root with a vegetable scrub and remove the skin with a peeler. Cut it into small slices.

Next, rub the pork ribs with salt. Leave for a few minutes, wash and par-boil to remove the “porky” smell and scum. This will ensure you end up with a pot of clear soup and tasty pork ribs.

Then, place the cut-up Lotus Root, red dates and oysters into the pot.

Place the par-boiled pork ribs in and add water. Bring to a boil and turn the heat down to medium and boil for an hour or two. If you have the time, it’s best left to simmer over a low heat for at least four hours for best results.

And here’s what you get later on. A very clear and delicious Lotus Root Soup with Pork Ribs to go with your rice. Dip the pork ribs into some Kikkoman Soy Sauce when you eat it. Dont throw away the rest of the ingredients out. Eat them as well.

This Bitter Gourd with Spare Ribs and Dates Soup is a hot favorite with my family. Bitter gourd has many health benefits. It contains a mixture of flavonoids and alkaloids which stimulates the pancreas to produce insulin that controls the blood sugar levels in diabetics. If you are a diabetic, then bitter gourd soup is good for you.

You will need one bitter gourd, 5 large red dates, 5 large dried oysters and spare ribs. You can use chicken if you want to. It’s easy to prepare. Rub spareribs with some salt and set aside. Cut the bitter gourd into half, and scoop the spongy insides out with a spoon. Wash it and cut into bite size pieces. Cut the dates and remove the stones. Wash the salt from the spare ribs and blanch with hot water. I do this to remove the “porky” taste from it. Final step, put everything into the crockpot and put on high for a few hours.

And this is how the Bitter Gourd with Spare Ribs and Dates Soup looks like when served. The soups is clear, not cloudy. The bitter gourd is soft and not bitter at all. My mother-in-law buys hairy gourds back every once in a while. Today, she asked me what to do with it and i suggested we make hairy gourd soup with it. I’ve not had hairy gourd soup for a long time and both my kids love it too. It’s easy to prepare. Just need to remove the peel and scrape out the seeds.

I found some red dates and dried oysters inside the fridge and decided to add those in as hairy gourds can be a bit bland. Dried oysters adds flavor to almost any kind of soup. The red dates will add sweetness. Yes, remove the seed from the red dates. Mother-in-law says to add some spare-ribs to the soup too cos she’s too lazy too cook it, lol. And here you go. A nice clear bowl of Hairy gourd soup with spare ribs, dried oysters and red dates. A really cooling soup recipe for the whole family.Get your man to eat the oysters.
